- 237 mlground flax seeds
- 1 teaspoonbaking powder
- 11 egg
- 1 tablespoonsour cream
- 1 pinchsalt

In a small bowl, combine flaxmeal, baking powder, egg and salt with a wisk.

Spray a large custard cup (I used a 4 cup Pyrex measuring cup) with non-stick spray (I used olive oil).

Pour the batter into the cup. Slip the cup into the microwave and nuke for 1 minute. Make sure the top is nice and dry. If it isn't, nuke for another 5 to 10 seconds. Dump the muffin out onto the counter or a cutting board, bottom-side up, and allow it to dry for a few minutes.

NOTE: Original recipe called for adding 2 packets of Splenda, 1/4 tsp cinnamon, and a few drops of vanilla extract.
