This is one of my favorite weeknight dinners because it comes together in under 40 minutes and tastes like you've spent ages preparing it. The air fryer does all the heavy lifting while you relax, roasting the butternut squash and sweet potato until they're caramelized and tender. I love using shawarma paste to add that restaurant quality spice blend without needing a dozen jars in my cupboard. Sweet potatoes are packed with vitamin A, which is great for your eyes and immune system. Serve it all wrapped up in flatbreads with cooling tzatziki and crisp lettuce for a satisfying meal that feels indulgent but is actually quite wholesome.

Instructions

Turn the air fryer to 180ºC and insert the grate in the cooking bowl. Toss the onions, sweet potato and squash with the oil in a bowl. Season, tip into the air fryer and cook for 5 minutes. Stir the vegetables and cook for a further 5 minutes, stirring again halfway through. Meanwhile, put a little water in the kettle on to boil.

Combine the shawarma paste with 1 tbsp just-boiled water in a small bowl. Add the sausages to the air fryer, pour over the shawarma mixture and add the thyme leaves. Carefully stir to mix through and continue to cook for a further 15 minutes, stirring halfway. The sausages and vegetables should be golden brown and tender by this point. If they don’t look caramelised, cook for a further 5 minutes. Serve the sausage mixture with the lettuce leaves, tzatziki and warmed flatbreads.

Coconut & raspberry crush
Have you tried making a drink that's both refreshing and genuinely good for you? This coconut and raspberry crush is my go to when I want something special without the fuss. The best part is how quick it comes together in just ten minutes of prep. Coconut water is absolutely fantastic for hydration, packed with natural electrolytes that your body actually needs. I love combining it with tart raspberries and a hint of mint for that perfect balance of sweet and zingy. It's simple, it's delicious, and honestly, it feels like you're treating yourself to something fancy.

Dark chocolate, chilli & salted pretzel slice
This is one of my favourite ways to use up a jar of chocolate sauce and create something that tastes far more impressive than it actually is. The magic happens when dark chocolate meets a hint of smoky chilli and the irresistible crunch of salted pretzels, all wrapped up in a simple sponge. Dark chocolate is packed with antioxidants, so you can feel a little virtuous with each bite. What I love most is that this comes together in just 15 minutes of prep and 40 minutes in the oven, making it perfect for when friends drop by unexpectedly. It's basically a one bowl wonder that never fails to impress.

Creamy burrata, sweet broad beans and fresh mint make for a brilliant summertime combo. Serve with crusty bread to mop up the delicious juices.
