This is my favorite chutney to make when autumn arrives and tomatoes are at their peak. It's wonderfully simple to prepare, taking just under two hours from start to finish, and uses ingredients you likely have in your kitchen already. The beauty of this recipe is that it costs very little to make but tastes like you've spent all day in the kitchen. Tomatoes are packed with lycopene, a powerful antioxidant that's even more concentrated when cooked. The combination of tart apples, warm spices, and sweet raisins creates a complex flavor that's perfect alongside roasted meats or cheese. I make several jars each season to enjoy throughout the year.
