This is one of my favorite weeknight dinners because it comes together in just 35 minutes, yet feels elegant enough for guests. Braised chicory becomes wonderfully tender and slightly sweet when cooked this way, and the bright citrus paired with aromatic thyme cuts through the bitterness beautifully. I love that chicory is packed with inulin, a prebiotic fiber that's genuinely good for your digestive health. The honey adds a lovely caramelized note, while the orange zest and juice keep everything fresh and vibrant. Best of all, it's simple enough that you barely need to think about it, leaving you free to focus on the rest of your meal.

Instructions
- 1
Carefully trim a couple of millimetres from the root end of the chicory (not too much – you want the layers to stay together), then cut each bulb in ½ lengthways. Heat the butter and oil in a large saucepan or sauté pan. Add the chicory halves, cut-side down, in a single layer. Season, scatter over the coriander seeds and cook for about š minutes until the underside is starting to caramelise.

Gently turn the chicory over and add the thyme, bay leaves, orange juice, honey and vinegar. Bring to a simmer, cover with a lid or a piece of foil, and cook for 15-20 minutes until the chicory is tender to the core and the juices are syrupy. Scatter with the orange zest to serve.

Dark chocolate, chilli & salted pretzel slice
This is one of my favourite ways to use up a jar of chocolate sauce and create something that tastes far more impressive than it actually is. The magic happens when dark chocolate meets a hint of smoky chilli and the irresistible crunch of salted pretzels, all wrapped up in a simple sponge. Dark chocolate is packed with antioxidants, so you can feel a little virtuous with each bite. What I love most is that this comes together in just 15 minutes of prep and 40 minutes in the oven, making it perfect for when friends drop by unexpectedly. It's basically a one bowl wonder that never fails to impress.

Coconut & raspberry crush
Have you tried making a drink that's both refreshing and genuinely good for you? This coconut and raspberry crush is my go to when I want something special without the fuss. The best part is how quick it comes together in just ten minutes of prep. Coconut water is absolutely fantastic for hydration, packed with natural electrolytes that your body actually needs. I love combining it with tart raspberries and a hint of mint for that perfect balance of sweet and zingy. It's simple, it's delicious, and honestly, it feels like you're treating yourself to something fancy.
