These brown butter mini tarts are my go to when I want something impressive but don't have hours to spend in the kitchen. The whole thing comes together in just 40 minutes, and honestly, the hardest part is resisting eating them straight from the oven. The nuttiness from the browned butter is absolutely divine, and eggs provide excellent protein to keep you satisfied. What I love most is how forgiving this recipe is and how inexpensive it is to make a batch that looks like it came from a fancy bakery. Perfect for impressing guests or treating yourself on a quiet afternoon.

Instructions
- 1
Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
- 2
In a large mixing bowl, whisk together flour, pastry flour, and salt. Add cold butter and use a pastry blender or your fingertips to work it into the flour mixture until it resembles coarse crumbs.
- 3
In a separate bowl, whisk together granulated sugar, eggs, and vanilla extract. Pour the wet ingredients into the flour mixture and mix until a dough forms.
- 4
Turn the dough out onto a lightly floured surface and roll out to a thickness of about 3 mm. Use a cookie cutter or a glass to cut out circles of dough.
- 5
Place a spoonful of the browned butter mixture into the center of each dough circle. Fold the dough over to form a triangle and press the edges together to seal the tart.
- 6
Brush the tops of the tarts with water and sprinkle with confectioner's sugar. Bake for 15-20 minutes, or until golden brown.
- 7
Allow the tarts to cool for a few minutes before serving. If desired, drizzle with confectioner's glaze and serve immediately.
- 8
Optional: To make the confectioner's glaze, mix confectioner's sugar and a small amount of water until smooth. Drizzle over the tarts before serving.
