This caramel coffee cake is my go to dessert when I need something impressive but don't have hours to spend in the kitchen. With just 25 minutes of baking time, you can pull a gorgeous, golden cake from the oven that tastes like you've been working all day. The coffee powder deepens the caramel flavor beautifully, while the walnuts add a lovely crunch and heart healthy fats. Best of all, you probably have most of these ingredients already, making this an affordable option for a special treat that your family will absolutely love.

Instructions
- 1
Preheat the oven to 180°C (350°F). Grease a 20cm round cake pan and line the base with parchment paper.
Tip: Use a non-stick pan to prevent the cake from sticking.
- 2
In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt.
Tip: Make sure to sift the dry ingredients to avoid lumps.
- 3
In a large bowl, use an electric mixer to beat the butter until creamy. Add the eggs one at a time, beating well after each addition.
Tip: Make sure to scrape down the sides of the bowl after each addition.
- 4
With the mixer on low speed, gradually add the dry ingredients to the butter mixture in three parts, alternating with the coffee powder, beginning and ending with the dry ingredients. Beat just until combined.
Tip: Be careful not to overmix the batter.
- 5
Pour in the caramel sauce, melted butter, and almond milk, and beat until just combined. Do not overmix.
Tip: The batter should still be slightly lumpy.
- 6
Pour the batter into the prepared cake pan and smooth the top.
Tip: Use a spatula to spread the batter evenly.
- 7
In a small bowl, mix together the brown sugar, confectioners' sugar, and melted butter until well combined.
Tip: Use a fork to crumble the mixture into small pieces.
- 8
Sprinkle the streusel topping evenly over the batter.
Tip: Make sure to cover the entire surface.
- 9
Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
Tip: Do not overbake the cake.
- 10
Remove from the oven and let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Tip: Let the cake cool completely before slicing and serving.
- 11
Once the cake is cool, drizzle with additional caramel sauce if desired.
Tip: This is optional, but adds an extra layer of flavor and sweetness.

Beergarita
My go to drink for summer gatherings is this refreshing Beergarita, and let me tell you, it's a total crowd pleaser. The combination of tequila, triple sec, fresh lime juice, and a cold Corona creates something that tastes way more complicated than it actually is. Lime juice is packed with vitamin C, which is great for your immune system, and the whole thing takes just five minutes to throw together. Best part? It's incredibly budget friendly since you're probably already stocking most of these ingredients anyway.

Tropical Quinoa
This tropical quinoa bowl has become my go to weeknight dinner because it comes together in just forty minutes and tastes like a mini vacation on a plate. Quinoa is one of my favorite ingredients since it's a complete protein with all nine essential amino acids, making it so satisfying and perfect for keeping energy levels steady. The combination of papaya, red bell pepper, and fresh cilantro brings vibrant flavors and colors, while the rice wine vinegar and orange zest add just the right brightness. Best part is the ingredient list is simple and affordable, yet feels fancy enough to impress anyone at your table.

Coconut & raspberry crush
Have you tried making a drink that's both refreshing and genuinely good for you? This coconut and raspberry crush is my go to when I want something special without the fuss. The best part is how quick it comes together in just ten minutes of prep. Coconut water is absolutely fantastic for hydration, packed with natural electrolytes that your body actually needs. I love combining it with tart raspberries and a hint of mint for that perfect balance of sweet and zingy. It's simple, it's delicious, and honestly, it feels like you're treating yourself to something fancy.
