- 250 gall-purpose flour
- 10 gbaking powder
- 5 gsalt
- 200 ggranulated sugar
- 120 gunsalted butter, softened
- 2 egglarge eggs
- 250 mlstrong black tea
- 100 gcaramel sauce
- 50 gbrown sugar
- 20 gunsalted butter, melted
- 50 gchopped walnuts
- 20 gdried cranberries
- 50 mlmilk
- 1½ mlvanilla extract

Preheat the oven to 180°C. Grease a 20cm loaf tin and line the base with parchment paper.

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

In a large bowl, cream together the granulated sugar and unsalted butter until light and fluffy.
Tip: Use an electric mixer for this step.

Beat in the eggs one at a time, followed by the strong black tea.

Gradually mix in the flour mixture until just combined, being careful not to overmix.

Stir in the caramel sauce, brown sugar, melted butter, chopped walnuts, and dried cranberries.

Pour the batter into the prepared loaf tin and smooth the top.

Bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
