This is one of my go to weeknight dinners because it comes together in under twenty minutes. The charred courgettes get this incredible smoky sweetness from the barbecue sauce, and then you top them with creamy manouri cheese that just melts into all those gorgeous char marks. Courgettes are packed with vitamins and fiber while being super low in calories, so you can feel good about loading your plate. The whole thing is so simple and honestly costs very little to make. It's become my favorite way to use up courgettes from the market.

Ingredients
- 1newman’s own sticky barbecue sauce & marinade(One quanity of marinade (see Cook's tip))
- 1 tbspolive oil
- 170 gramsmanouri cheese(packs manouri, cut into 8 strips)
- 200 gramscourgettes
- 1 bunch/essalad onion(trimmed and halved jumbo salad onions)

Make 1 quantity of marinade (see Cooks' tip below).

Drizzle olive oil over the manouri, baby courgettes and salad onions, then put on a medium-hot part of the barbecue. Cook for 10 minutes, turning occasionally, until the vegetables are charred and tender. Brush with marinade and turn again. Cook for a further 1-2 minutes until starting to caramelise, then brush again and cook for a final 1-2 minutes. Serve, drizzling over any remaining marinade, if you like.
