- 20 gchilli flakes
- 5 gcinnamon
- 20 gbaking powder
- 10 gsalt
- 150 gunsalted butter
- 200 ggranulated sugar
- 2large eggs
- 250 gplain flour
- 150 mlmilk
- 1½ mlvanilla extract

Preheat the pizzelle iron according to the manufacturer's instructions. In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.

In a small bowl, whisk together the chilli flakes and cinnamon. Add the dry ingredients to the wet ingredients and mix until just combined.

Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms. Stir in the melted chocolate chips.

If using, divide the dough into 2 portions and mix in the milk to create a slightly softer dough for the waffle cookies. If not using, mix all dough together.

Roll out the dough to a thickness of about 3mm. Place a portion of the dough onto the preheated pizzelle iron and cook for 30-60 seconds, until the edges are golden brown.

Repeat with the remaining dough, greasing the iron between each use. Store the pizzelle in an airtight container for up to 3 days.
Tip: Store in a cool, dry place for maximum flavour.
