- 100 mlsthe london essence co original indian tonic water(Indian tonic water, to top up)
- 1grapefruit(pink grapefruit slice)

Put the Lillet Blanc, grapefruit juice and 1 sprig of lemon thyme in a cocktail shaker. Fill with ice and shake until very cold. Strain into a large, ice filled wine glass and top up with tonic water. Add the grapefruit slice and the remaining sprig of lemon thyme to serve.
