This is one of my go to weeknight dinners because it comes together in just thirty minutes and requires minimal effort. The combination of coconut milk and fresh lime creates this beautifully balanced flavor that feels restaurant quality but tastes homemade. I love using coconut oil in this dish since it's packed with healthy fats that keep you satisfied longer than regular cooking oils. The whole thing cooks in one pot, which means less cleanup and more time to enjoy your meal. It's the kind of recipe that impresses without demanding much from you in the kitchen.
