Cullen skink is this wonderful Scottish soup that I absolutely love making on busy weeknights. It comes together in just 30 minutes, which makes it perfect when you need something comforting but don't have hours to spend in the kitchen. The smoked haddock gives it this incredible depth of flavor while also being packed with omega 3 fatty acids that are great for your heart. With just a handful of simple ingredients like leeks, potatoes, and cream, it's genuinely foolproof and so satisfying. Trust me, once you try this creamy, smoky bowl of goodness, you'll find yourself making it again and again.

Instructions
- 1
Place a medium size saucepan onto a medium heat, melt the butter and fry the chopped onion for about 3 minutes until it becomes translucent. Lay the haddock fillets on top of the onions with the bay leaf and pour in 500ml of the milk so it covers the fish. Bring the milk to a gentle simmer and cook the haddock for about 5 minutes until the flesh is opaque and the fillets can be easily flaked.
- 2
Remove the haddock fillets and leave on a plate to cool. Add the sliced leeks, potato cubes and the remainder of the milk to the pan. Gently simmer for another 10 minutes until both the leeks and potatoes are cooked through. Take out the bay leaf. Use a hand blender to blitz the soup until smooth.
- 3
When the haddock is cool enough to handle, gently break the fillets up into small flakes and remove all the skin and check for any bones.
- 4
Add the haddock flakes to the puréed soup, add the single cream and seasoning to taste. Serve with buttered crusty bread, garnished with chopped parsley if you wish.

This is one of my favourite ways to use up a jar of chocolate sauce and create something that tastes far more impressive than it actually is. The magic happens when dark chocolate meets a hint of smoky chilli and the irresistible crunch of salted pretzels, all wrapped up in a simple sponge. Dark chocolate is packed with antioxidants, so you can feel a little virtuous with each bite. What I love most is that this comes together in just 15 minutes of prep and 40 minutes in the oven, making it perfect for when friends drop by unexpectedly. It's basically a one bowl wonder that never fails to impress.
