- 800 ggranulated sugar
- 200 glight brown sugar
- 100 gsea salt
- 120 mlheavy cream
- 250 gunsalted butter
- 4 egglarge egg yolks
- 1 mlvanilla extract
- 400 gpraline coating sugar

Line a baking sheet with parchment paper. In a medium saucepan over medium heat, combine dark chocolate chips, granulated sugar, and light brown sugar. Stir until smooth and melted.

In a small bowl, whisk together heavy cream, butter, egg yolks, and vanilla extract. Pour the cream mixture into the chocolate mixture and stir until well combined.

Bring the mixture to a boil, then reduce heat to medium-low and simmer for 5 minutes. Remove from heat and stir in sea salt.

Pour the praline mixture onto the prepared baking sheet. Allow to cool and set at room temperature.

Once set, melt the praline coating sugar in a small saucepan over low heat. Dip each praline into the melted sugar, coating completely.
