Ingredients
- 400 gall-purpose flour
- 200 gdark brown sugar
- 150 gunsalted butter
- 2large eggs
- 100 gspeculoos spice mix
- 5 gsalt
- 25 gbaking powder
- 20 gground cinnamon
- 300 gdark chocolate chips
- 120 mlvegetable oil
- 200 mlwater
- 10 gespresso powder
Instructions

Preheat the oven to 180°C (350ºfF). Line a baking sheet with parchment paper.

In a medium bowl, whisk together flour, brown sugar, baking powder, cinnamon, and salt.

In a large bowl, cream together butter and eggs. Add the espresso powder and mix until combined.
Tip: Be careful not to overmix.

Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.

Add the speculoos spice mix and mix until combined.

Stir in the dark chocolate chips.

Add the vegetable oil and water, and mix until a dough forms.

Scoop the dough into balls, about 20g each.
Tip: Leave about 2cm of space between each cookie.

Bake for 15-20 minutes or until the edges are lightly golden.
Tip: Don't overbake.

Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
