- 1 mediumred cabbage finely sliced
- 14 star anise
- 12 cinnamon sticks
- 100 mlvegetable stock
- 50 glight brown soft sugar
- 50 mlcider vinegar

Put the wine in a saucepan over a medium heat. Bring to a simmer and cook for 3 mins. Add the remaining ingredients and bring back to the boil.

Reduce the heat to a simmer, cover and cook for 30 mins, then remove the lid and cook for 15 mins. Will keep chilled for three days or frozen for up to a month.
