These five spice pork and shiitake spring rolls are one of my favourite weeknight dinners because they come together in under two hours and taste absolutely restaurant quality. The shiitake mushrooms add such wonderful umami depth while being packed with immune boosting vitamins, and honestly, the whole filling comes together so quickly once you get your prep done. I love that you can make these ahead and pop them in the oven when you're ready to eat, or even freeze them for later. The combination of aromatic Chinese five spice with crispy filo pastry and that tangy chilli vinegar dipping sauce just hits every single time.

Instructions
- 1
For the sambal, pour 500ml water into a pan, add the chillies and garlic and boil until very tender (about 15 minutes). Drain, then transfer to a blender with the sugar and vinegar. Blend well, season if needed and set aside in a bowl until ready to serve (cover and chill if making ahead).
- 2
Meanwhile, for the rolls, heat 2 tbsp oil in a large frying pan over a medium heat. Fry the onion for 5-7 minutes until soft. Increase the heat, add the mushrooms and cook for 2-3 minutes. Stir in the pork and cook for 5-8 minutes, stirring regularly to break it up, until cooked through, the juices run clear and no pink meat remains. Season with the salt, soy sauce and pepper. Cook for another 2 minutes, then set aside in a bowl to cool. Once cool, sprinkle the cornflour over the pork mixture and mix well. Stir in the egg, grated carrot, salad onions and Chinese five spice.
- 3
Preheat the oven to 200°C, gas mark 6. Put the filo sheets on a chopping board. Cut in ½ so you have 14 rough squares; cover with a clean tea towel to stop them drying out. For each roll, take a halved sheet of filo and put 2-3 heaped tbsp pork mixture into the middle of the side nearest you. Brush all 4 edges of the pastry with melted butter and roll it away from you to enclose the filling, folding in the sides as you roll to seal each one. Repeat until the filo and filling are finished, transferring the spring rolls to baking trays as you go.
- 4
Brush the rolls with the remaining 2 tbsp oil, then bake for 12-15 minutes, turning halfway, until golden and crispy. Arrange on a platter and serve with the sambal, or sriracha if preferred.

Dark chocolate, chilli & salted pretzel slice
This is one of my favourite ways to use up a jar of chocolate sauce and create something that tastes far more impressive than it actually is. The magic happens when dark chocolate meets a hint of smoky chilli and the irresistible crunch of salted pretzels, all wrapped up in a simple sponge. Dark chocolate is packed with antioxidants, so you can feel a little virtuous with each bite. What I love most is that this comes together in just 15 minutes of prep and 40 minutes in the oven, making it perfect for when friends drop by unexpectedly. It's basically a one bowl wonder that never fails to impress.

Crispy seabass with preserved lemon yogurt
This is one of my favorite quick weeknight dinners because it comes together in just ten minutes flat. Crispy seabass with preserved lemon yogurt is that perfect balance of impressive and effortless, with tangy Greek yogurt and zingy preserved lemon creating a sauce that feels restaurant quality but tastes like home. The seabass gets beautifully golden and flaky while the freekeh provides substantial whole grains packed with fiber and protein. It's the kind of meal that makes you feel like you're treating yourself without any fuss.

Minted bean & burrata salad
Creamy burrata, sweet broad beans and fresh mint make for a brilliant summertime combo. Serve with crusty bread to mop up the delicious juices.
