This Greek crab salad is one of my favorite go to meals when I want something that feels fancy but comes together in just 35 minutes. The sweet crab meat paired with tangy feta and briny olives creates this incredible Mediterranean flavor that honestly tastes like you spent hours in the kitchen. What I love most is how budget friendly it is considering how impressive it looks on the table. Plus, all those fresh vegetables and especially the kalamata olives are packed with antioxidants that are wonderful for your heart health. It's perfect for weeknight dinners or casual entertaining, and everything is raw except for a quick warm up, making cleanup an absolute breeze.
