This is one of my favorite ways to cook aubergines because it's so simple yet feels fancy enough for guests. The smoky char from the grill brings out the best in these vegetables, and I love how the tangy yogurt dressing with fresh ginger and herbs cuts through the richness perfectly. Greek yogurt is packed with probiotics that are great for your digestion, so you're getting something nutritious without any fuss. The whole thing comes together in just 40 minutes from start to finish, making it ideal for a quick weeknight dinner or impressive side dish. Trust me, once you try this combination, you'll be making it again and again.
