This is one of my favorite weeknight dinners because it comes together in under an hour and tastes absolutely restaurant quality. Halloumi is fantastic for grilling since it has a high melting point and gets this gorgeous golden crust, while the roasted pumpkin becomes wonderfully caramelized and sweet. Pumpkin is packed with vitamin A, which is great for your eyes and immune system. - 1 tspsalt
- 1 tsppepper
- 2 clovesgarlic(minced)
