Instructions
- 1
Combine warm water, yeast, and a pinch of sugar in a bowl. Let sit for 5 minutes until foamy.
Tip: This activates the yeast and ensures your dough will rise properly.
- 2
Mix flour and salt in a large bowl. Add the yeast mixture and 15 ml of olive oil. Stir until a rough dough forms.
Tip: Don't overwork the dough at this stage; just combine the ingredients.
- 3
Knead the dough for 8-10 minutes on a floured surface until smooth and elastic. Place in an oiled bowl, cover with a damp cloth, and let rise for 45 minutes.
Tip: The dough should roughly double in size. If your kitchen is cold, place it in a warm spot.
- 4
While dough rises, heat 15 ml of olive oil in a small pan and sauté minced garlic for 1 minute. Add rosemary, thyme, and parsley, stirring for another minute. Remove from heat and let cool.
Tip: This infused oil will give your breadsticks incredible flavor.
- 5
Punch down the risen dough and roll it out on a floured surface into a thin rectangle about 25 cm × 30 cm. Brush with the herb-infused oil and sprinkle parmesan and black pepper evenly.
Tip: Leave a small border around the edges for easier handling.
- 6
Cut the dough into strips about 1.5 cm wide and 25 cm long. Gently twist each strip and place on a lined baking tray, spacing them about 3 cm apart.
Tip: Twisting the dough creates a beautiful presentation and more surface area for crispiness.
- 7
Let breadsticks rest for 10 minutes. Meanwhile, preheat your oven to 200°C.
Tip: This short rest allows the dough to relax before baking.
- 8
Bake for 15-18 minutes until golden brown and crispy. Remove from oven and let cool on a wire rack for 5 minutes before serving.
Tip: For extra crispiness, place them on the middle rack and rotate the tray halfway through baking.
