These herb sausage rolls are absolutely delicious and so easy to make. I've been whipping them up for years because they're ready in under an hour and cost just a few pounds to prepare. The fresh thyme and sage really elevate simple sausage meat into something special, and thyme is fantastic for your digestion and immune system too. They're perfect for parties, packed lunches, or a quick weeknight dinner. Trust me, once you try homemade versions, you'll never go back to shop bought.

Instructions
- 1
Preheat your oven to 200 degrees Celsius.
- 2
In a large bowl, combine the sausage meat with breadcrumbs, thyme, sage, diced onion, and egg. Mix gently until everything is evenly distributed, then season with salt and pepper.
Tip: Don't overwork the mixture or the sausage will become tough and dense.
- 3
Lay out your puff pastry sheets and divide the sausage mixture into two portions, one for each sheet. Spread the mixture along the center of each pastry sheet in a long log shape.
Tip: Leave about 2 centimeters of pastry visible on all sides for wrapping and sealing.
- 4
Roll the pastry tightly around the sausage filling, sealing the seam with a little water along the edge if needed.
Tip: A pastry brush or your finger works well for dampening the seam.
- 5
Cut each rolled log into 8 equal pieces using a sharp knife, creating 16 rolls total.
Tip: Wiping your knife between cuts keeps the pastry from sticking and gives cleaner edges.
- 6
Place the rolls seam side down on a baking tray lined with parchment paper. Brush lightly with olive oil.
Tip: This helps them turn golden and crispy during baking.
- 7
Bake for 25 to 30 minutes until the pastry is puffed and golden brown.
Tip: Rotate the tray halfway through cooking for even browning if your oven has hot spots.
- 8
Remove from the oven and let cool for 5 minutes before serving. Enjoy warm or at room temperature.
Tip: These are wonderful served with wholegrain mustard or a simple salad for a lighter meal.

Coconut & raspberry crush
Have you tried making a drink that's both refreshing and genuinely good for you? This coconut and raspberry crush is my go to when I want something special without the fuss. The best part is how quick it comes together in just ten minutes of prep. Coconut water is absolutely fantastic for hydration, packed with natural electrolytes that your body actually needs. I love combining it with tart raspberries and a hint of mint for that perfect balance of sweet and zingy. It's simple, it's delicious, and honestly, it feels like you're treating yourself to something fancy.

Beergarita
My go to drink for summer gatherings is this refreshing Beergarita, and let me tell you, it's a total crowd pleaser. The combination of tequila, triple sec, fresh lime juice, and a cold Corona creates something that tastes way more complicated than it actually is. Lime juice is packed with vitamin C, which is great for your immune system, and the whole thing takes just five minutes to throw together. Best part? It's incredibly budget friendly since you're probably already stocking most of these ingredients anyway.

Crispy seabass with preserved lemon yogurt
This is one of my favorite quick weeknight dinners because it comes together in just ten minutes flat. Crispy seabass with preserved lemon yogurt is that perfect balance of impressive and effortless, with tangy Greek yogurt and zingy preserved lemon creating a sauce that feels restaurant quality but tastes like home. The seabass gets beautifully golden and flaky while the freekeh provides substantial whole grains packed with fiber and protein. It's the kind of meal that makes you feel like you're treating yourself without any fuss.
