Honey baklava is one of my favorite desserts to make because it comes together in just about an hour, which is surprisingly quick for something so impressive. The beauty of this recipe is that you probably have most of these ingredients already in your pantry, making it wonderfully budget friendly. What I love most is the golden honey that binds everything together with its natural sweetness and amazing health benefits, particularly its soothing properties and antioxidants. These phyllo free layers of buttery pastry, toasted nuts, and floral rose water create something absolutely magical that tastes like you spent all day in the kitchen, even though you really didn't.

Instructions
- 1
Preheat oven to 180\u00b0C. Prepare the pastry dough by mixing together the flour, confectioner's sugar, and cold butter until crumbly. Gradually add the ground almonds and walnuts, mixing until well combined.
Tip: Use a food processor to speed up the process.
- 2
Roll out the pastry dough to a thickness of about 3mm. Cut into diamond shapes, about 5cm wide.
- 3
Layer the pastry diamonds in a baking dish, brushing each layer with a little water and sprinkling with a pinch of confectioner's sugar.
Tip: Make sure to leave a small gap between each layer.
- 4
Bake the pastry for 20-25 minutes, or until lightly golden.
Tip: Keep an eye on it to avoid overcooking.
- 5
While the pastry is baking, prepare the honey syrup by heating the honey, rose water, and water in a saucepan until smooth.
Tip: Don't boil the syrup, as it can become too thick.
- 6
Once the pastry is done, remove it from the oven and let it cool for a few minutes.
Tip: This will make it easier to handle.
- 7
Drizzle the honey syrup over the pastry, letting it soak in before sprinkling with chopped nuts.
Tip: You can adjust the amount of syrup to your liking.
- 8
Let the baklava cool completely before slicing and serving.
Tip: This will help the flavors to meld together.
- 9
Cut the baklava into diamond shapes and serve with a dusting of confectioner's sugar.
Tip: You can also serve it with a cup of tea or coffee.
