This is one of my favorite desserts to make when I want something homey and delicious without spending hours in the kitchen. Honey cobbler comes together in just an hour from start to finish, and the ingredient list is probably already sitting in your pantry. The honey is the real star here, not only sweetening the fruit beautifully but also providing natural antibacterial properties and sustained energy. Mixed berries make this cobbler burst with flavor while delivering those wonderful antioxidants, and the buttery biscuit topping bakes up golden and perfect every time. It's comfort food at its finest, and I promise you'll be reaching for another serving.

Instructions
- 1
Preheat the oven to 180°C (350ºfF).
Tip: Make sure to use a rack in the middle of the oven for even baking.
- 2
In a large mixing bowl, combine the flour, cold butter, and granulated sugar. Use a pastry blender or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs.
Tip: Be careful not to overwork the mixture, as this can lead to tough pastry.
- 3
Add the brown sugar, eggs, milk, and honey to the bowl. Mix until a dough forms.
Tip: If the dough is too dry, add a little more milk. If it's too wet, add a little more flour.
- 4
Gently fold in the mixed berries and almond extract.
Tip: Don't overmix, as this can cause the berries to break and lose their flavor.
- 5
Transfer the dough to a 20cm (8in) pie dish and spread it evenly.
Tip: Make sure to leave a 2.5cm (1in) border around the edges.
- 6
Bake the cobbler for 40-45 minutes, or until the pastry is golden brown and the fruit is bubbly.
Tip: Cover the edges with foil if they start to brown too quickly.
- 7
Remove the cobbler from the oven and let it cool for 10-15 minutes before serving.
Tip: Serve warm, topped with vanilla ice cream or whipped cream if desired.
- 8
Sprinkle a pinch of salt over the cobbler before serving.
Tip: This will balance out the sweetness and enhance the flavors.
