This honey lattice pie is one of my favorite desserts to make when I want something impressive but not complicated. The beautiful golden lattice on top looks fancy, but honestly, it comes together in just about an hour of total time. What I love most is how honey brings natural sweetness and contains antioxidants that make this treat feel a little less guilty. Plus, using a store bought pie crust means you skip all the fussy pastry work, letting you focus on creating that stunning woven pattern. It's the perfect balance of elegant presentation and approachable baking.

Instructions
- 1
Preheat oven to 180°C (350°F).
Tip: Line a baking sheet with parchment paper for easy cleanup.
- 2
In a large mixing bowl, combine flour and salt. Add cold butter and use a pastry blender or fingers to work it into the flour until the mixture resembles coarse crumbs.
Tip: Be careful not to overmix the dough.
- 3
Gradually add ice-cold water, stirring with a fork until the dough comes together in a ball.
Tip: Don't overwork the dough.
- 4
Divide the dough into two equal parts. Roll out each half into a thin sheet, about 3mm thick.
Tip: Use a rolling pin to achieve an even thickness.
- 5
In a separate bowl, whisk together sugar, honey, eggs, and vanilla extract.
Tip: Make sure to scrape down the sides of the bowl.
- 6
Place one of the dough sheets into a 20cm pie dish, pressing it into the corners and edges. Fill the pie crust with the honey mixture.
Tip: Make sure the filling is evenly distributed.
- 7
Place the second dough sheet on top of the filling. Trim the excess dough from the edges and crimp to seal.
Tip: Use a fork to create a decorative lattice pattern.
- 8
Cut slits in the top crust to allow steam to escape during baking.
Tip: Make sure the slits are about 1cm apart.
- 9
Brush the top crust with melted butter and sprinkle with granulated sugar.
Tip: This will help create a golden brown color.
- 10
Bake for 40-45 minutes, or until the crust is golden brown and the filling is set.
Tip: Check the pie after 35 minutes and cover the edges with foil if they start to brown too quickly.
- 11
Remove from the oven and let cool for 10 minutes.
Tip: Drizzle with honey glaze and serve warm.
