These honey sausage rolls are absolutely my go to when I need something impressive but don't have much time. The beauty of this recipe is that it comes together in under an hour, making it perfect for unexpected guests or a quick weeknight dinner. Honey is the secret ingredient here, adding natural sweetness and antimicrobial properties that make it genuinely good for you. The whole thing is wonderfully simple and uses pantry staples you probably already have at home. Wrapped in buttery puff pastry with aromatic thyme and a touch of golden honey, these little rolls deliver restaurant quality results without the fuss or expense.

Instructions
- 1
Preheat your oven to 200 degrees Celsius and line a baking tray with parchment paper.
- 2
In a large bowl, combine the sausage meat with diced onion, breadcrumbs, thyme, half the honey, salt and pepper. Mix gently with your hands until just combined without overworking the mixture.
Tip: Don't squeeze the mixture too much or the rolls will become dense and tough.
- 3
Lay out your pastry sheets on a clean work surface and divide the sausage mixture into 8 equal portions. Roll each portion into a log shape and place it along the edge of each pastry sheet.
Tip: If your pastry is too sticky, dust lightly with flour as you work.
- 4
Roll each pastry sheet tightly around the sausage, sealing the seam with a little water. Cut each roll in half to create 16 smaller rolls.
Tip: A sharp knife dipped in hot water will cut the rolls cleanly without squishing them.
- 5
Arrange the rolls on your prepared baking tray with the seam side down, spacing them about 2 centimeters apart.
- 6
Brush each roll with beaten egg and drizzle lightly with the remaining honey. This creates a beautiful glaze and adds extra flavor.
- 7
Bake for 25 to 30 minutes until the pastry is golden brown and crispy, and the sausage is cooked through.
Tip: If the rolls start browning too quickly, cover loosely with foil for the last 10 minutes.
- 8
Remove from the oven and let cool for 5 minutes before serving warm or at room temperature.

Coconut & raspberry crush
Have you tried making a drink that's both refreshing and genuinely good for you? This coconut and raspberry crush is my go to when I want something special without the fuss. The best part is how quick it comes together in just ten minutes of prep. Coconut water is absolutely fantastic for hydration, packed with natural electrolytes that your body actually needs. I love combining it with tart raspberries and a hint of mint for that perfect balance of sweet and zingy. It's simple, it's delicious, and honestly, it feels like you're treating yourself to something fancy.

Beergarita
My go to drink for summer gatherings is this refreshing Beergarita, and let me tell you, it's a total crowd pleaser. The combination of tequila, triple sec, fresh lime juice, and a cold Corona creates something that tastes way more complicated than it actually is. Lime juice is packed with vitamin C, which is great for your immune system, and the whole thing takes just five minutes to throw together. Best part? It's incredibly budget friendly since you're probably already stocking most of these ingredients anyway.

Crispy seabass with preserved lemon yogurt
This is one of my favorite quick weeknight dinners because it comes together in just ten minutes flat. Crispy seabass with preserved lemon yogurt is that perfect balance of impressive and effortless, with tangy Greek yogurt and zingy preserved lemon creating a sauce that feels restaurant quality but tastes like home. The seabass gets beautifully golden and flaky while the freekeh provides substantial whole grains packed with fiber and protein. It's the kind of meal that makes you feel like you're treating yourself without any fuss.
