- 1 tspdemerara sugar
- 15 mlspassion fruit syrup
- 30 mlspineapple juice
- 15 mlslime juice
- 60 mlsgold rum
- 1 tspunsalted butter
- 1 tspoverproof rum(overproof (extra strength) rum (optional))
- 1cinnamon stick(to garnish)

Swirl just-boiled water around a heatproof glass or mug to warm it, then discard. Add the sugar and dissolve it in 1 tbsp just-boiled water. Add the passion fruit syrup, pineapple and lime juices and the gold rum; top up with 120ml just-boiled water. Add the butter to the top. If liked, you can top this with a bar spoonful (1 tsp) of overproof rum and set it alight. Garnish with the cinnamon stick.
