This is one of my favorite quick weeknight dinners because it comes together in just thirty minutes from start to table. The combination of tender kale and bright kiwi might sound unconventional, but trust me, it works beautifully. Kale is absolutely packed with vitamins and minerals that keep me feeling energized, while the kiwi adds a refreshing tartness that cuts through the earthiness perfectly. The whole dish is simple enough for a busy weeknight yet impressive enough to serve to guests, and it requires ingredients you probably already have on hand.
