- 4 sprig/sthyme( thyme plus extra picked leaves to serve)
- 3 tbspmaple syrup
- 30 gramshazelnuts(toasted and roughly chopped)

Preheat the oven to 200ºC, gas mark 6. Put the parsnips in a roasting tin; toss with the oil. Season with the salt and add the thyme. Roast for 20 minutes, then drizzle over the maple syrup; toss to coat. Roast for 10-20 minutes more until tender and caramelised, then scatter with the thyme leaves and hazelnuts.
