My maple toffee recipe is one of my absolute favorites to make when I want something that feels fancy but comes together in just an hour. The combination of maple syrup and golden syrup creates this incredibly rich, buttery flavor that reminds me of autumn every single time. What I love most is how simple it actually is, with ingredients you probably already have in your kitchen. The walnuts add a wonderful crunch plus heart healthy fats that make this feel a bit less indulgent. Best of all, it's perfect for gifting or bringing to gatherings, and your friends will have no idea how easy it was to make.

- 3
Remove the saucepan from the heat and stir in the light brown sugar until it has dissolved. Let the mixture cool slightly.
Tip: Be careful, as the mixture will bubble up and steam vigorously.
- 4
In a separate bowl, whisk together the flour, salt, and espresso powder. Add the chopped walnuts and stir to combine.
- 5
Pour the sugar mixture into the bowl with the flour mixture and stir until just combined.
- 6
Add the dark chocolate chips and stir until they have melted and the mixture is smooth.
- 7
Stir in the vanilla extract and let the mixture cool to room temperature.
Tip: This will help the toffee set properly.
- 8
Pour the mixture onto the prepared baking tray and smooth the top with a spatula.
- 9
Allow the toffee to cool and set completely. Break it into pieces and serve.
