This Middle Eastern tofu salad is one of my go to meals when I want something fresh and satisfying without spending hours in the kitchen. It comes together in just 45 minutes and costs next to nothing, making it perfect for weeknight dinners. The tahini dressing is absolutely creamy and nutty, while the crisp vegetables and crumbly feta keep things interesting. What I love most is that tofu is packed with plant based protein, so this salad actually keeps you full and energized. It's the kind of dish that feels impressive but honestly could not be easier to throw together.
