These little milk chocolate mini tarts are one of my favorite go to desserts when I want something impressive but don't have much time. They come together in just 35 minutes from start to finish, which makes them perfect for last minute gatherings or when a chocolate craving strikes. The best part is that you probably have most of these ingredients on hand already, so there's no need for a special trip to the store. Dark cocoa powder, which gives these tarts their lovely depth, is packed with antioxidants and actually has some surprising health benefits. The whole process is remarkably straightforward too, even if you're not an experienced baker, so don't hesitate to give them a try.

Instructions
- 1
Preheat the oven to 180°C. Roll out the chilled pastry dough to a thickness of about 3mm. Cut out small squares, about 5cm per side.
Tip: Use a cookie cutter for uniform shapes.
- 2
In a small bowl, whisk together the granulated sugar, egg, milk, and vanilla extract. Add the melted butter and whisk until combined.
Tip: Make sure the mixture is smooth and creamy.
- 3
Pour the sugar mixture into a piping bag fitted with a small round tip. Pipe small circles onto the pastry squares.
Tip: Leave about 1cm of space between each circle.
- 4
Spoon a small amount of milk chocolate into the center of each circle. Dust with confectioner's sugar.
Tip: Make sure the chocolate is evenly distributed.
- 5
Sprinkle a pinch of salt over the chocolate for added flavor.
Tip: Use a light hand, as too much salt can overpower the chocolate.
- 6
Bake for 15-20 minutes, or until the pastry is golden brown and the chocolate is set.
Tip: Keep an eye on them to prevent overbaking.
- 7
Allow the tarts to cool completely in the pan before serving.
Tip: This will help the chocolate set properly.
- 8
Once cooled, dust the tarts with cocoa powder and serve.
Tip: This adds a nice touch to the presentation.

Beergarita
My go to drink for summer gatherings is this refreshing Beergarita, and let me tell you, it's a total crowd pleaser. The combination of tequila, triple sec, fresh lime juice, and a cold Corona creates something that tastes way more complicated than it actually is. Lime juice is packed with vitamin C, which is great for your immune system, and the whole thing takes just five minutes to throw together. Best part? It's incredibly budget friendly since you're probably already stocking most of these ingredients anyway.

Tropical Quinoa
This tropical quinoa bowl has become my go to weeknight dinner because it comes together in just forty minutes and tastes like a mini vacation on a plate. Quinoa is one of my favorite ingredients since it's a complete protein with all nine essential amino acids, making it so satisfying and perfect for keeping energy levels steady. The combination of papaya, red bell pepper, and fresh cilantro brings vibrant flavors and colors, while the rice wine vinegar and orange zest add just the right brightness. Best part is the ingredient list is simple and affordable, yet feels fancy enough to impress anyone at your table.

Crispy seabass with preserved lemon yogurt
This is one of my favorite quick weeknight dinners because it comes together in just ten minutes flat. Crispy seabass with preserved lemon yogurt is that perfect balance of impressive and effortless, with tangy Greek yogurt and zingy preserved lemon creating a sauce that feels restaurant quality but tastes like home. The seabass gets beautifully golden and flaky while the freekeh provides substantial whole grains packed with fiber and protein. It's the kind of meal that makes you feel like you're treating yourself without any fuss.
