Here's my go to sandwich when I want something impressive but don't have much time. The Monte Cristo is basically a fancy take on a classic club sandwich, but dipped in egg and pan fried until it's golden and crispy. I love making this because it comes together in just twenty minutes total, and you probably have most of the ingredients already in your kitchen. The ham and turkey give you lean protein while the Emmental adds a lovely nutty flavor, and honestly, it's so satisfying that you won't need much else for lunch. Best of all, it's budget friendly and requires minimal effort, which means more time enjoying your meal and less time in the kitchen.

Instructions
- 1
Mix the mustard and mayo in a small bowl, then spread over each slice of bread. Top one slice with the ham, turkey and cheese, then sandwich with the remaining slice of bread.
- 2
Whisk the egg and milk in a wide, shallow bowl or dish. Soak the sandwich in the egg mixture, leaving for a few minutes on each side until all the egg has been absorbed by the bread.
- 3
Melt the butter in a frying pan. When it’s sizzling, add the sandwich and cook for 4-5 mins on each side until golden brown. If you have a sandwich or burger press, use this to weigh the sandwich down. If not, place a heavy lid on top to compress the sandwich and help melt the cheese. Cut in half to serve.
