Preheat the oven to 180°C. Roll out the tart pastry and press it into a 23cm tart pan.

Line the pastry with parchment paper and fill with pie weights.

Bake the pastry for 15 minutes. Remove the parchment paper and pie weights.

In a blender or food processor, combine the caster sugar, orange zest, and salt. Process until well combined.

Melt the dark chocolate in a double boiler or in the microwave in 30-second increments, stirring between each interval.

Whisk together the orange juice and cream. Add the melted chocolate and whisk until smooth.

Beat in the eggs one at a time, whisking well after each addition.

Add the sugar and orange mixture to the egg mixture. Whisk until well combined.
