- 237 mlpepperoni slice(plus more for topping)
- 11 1/2 lbs ground beef
- 11(13 ounce) jar pizza sauce)
- 237 mlitalian seasoned breadcrumbs
- 11 egg(beaten)
- 1 smallbell pepper(finely diced)
- 11/2 yellow onion(finely diced)
- 12 garlic cloves(minced)
- 1 teaspoonsalt
- 1pepper
- 237 mlshredded mozzarella cheese
- 1red pepper flakes(for garnish)
- 1chopped parsley(for garnish)

Preheat oven to 375°F.

Line the bottom of an 8-inch spring form pan with parchment paper and spray with nonstick spray. Wrap the bottom and sides with a piece of aluminum foil and place on a sheet pan.

Coarsely chop the pepperoni slices and add to a large bowl. Add the ground beef, 1 cup pizza sauce, bread crumbs, egg, bell pepper, onion, garlic, salt and a few grinds of pepper.

Mix to combine and transfer to the prepared cake pan.

Spread the remaining pizza sauce on top of the meatloaf.

Bake for 45 minutes.

Remove from oven and top with shredded mozzarella and pepperoni slices.
