These little friands are my go to when I want something elegant but don't have hours to spend in the kitchen. They come together in just fifty minutes from start to finish, which makes them perfect for unexpected guests or a simple weeknight treat. The star here is really the pistachio, which gives these cakes a beautiful pale green color and a subtle nuttiness. Pistachios are also packed with antioxidants and healthy fats, so you can feel good about indulging. Ingredients
- 110 gramsunsalted butter(melted, plus extra for greasing)
- 100 gramsplain flour(plus extra for dusting)
- 4 sprig/sthyme
- 150 gramspistachio kernels
- ½ tspbaking powder
- 200 gramsicing sugar(sifted)
- 3 tbspcaster sugar
- 5british blacktail free range medium eggs(British Blacktail Free Range Medium Egg whites)
- 2plums(cut into 1cm wedges)

Preheat the oven to 160ºC, gas mark 3. Grease a nonstick 12-hole muffin tin with melted butter, then dust with flour and tap out the excess.

Pick 1 tsp leaves from 2-3 sprigs thyme. Place in a food processor with the pistachios and blitz until the nuts are finely ground. Add the melted butter, flour, baking powder, both sugars and egg whites and blitz for about 1 minute, until nice and creamy.

Spoon the mixture into the prepared muffin tin, then sit the plum wedges over the top. Pick small sprigs of thyme from what’s left, and sprinkle over the top. Bake for 30-35 minutes, or until light golden and springy to the touch and a skewer when inserted into the center of a friand comes out clean.

Remove from the oven and leave in the tin for 5 minutes before turning out onto a wire rack to cool.
