- 100 gramscaster sugar
- 100 mlswater
- ½lemon
- ½ tbspgin
- 1dry sparkling wine or champagne(top with chilled sparkling wine)

Put chopped rhubarb, caster sugar, water and the lemon juice in a pan. Cook over a medium heat for 10 minutes, until the fruit is very soft. Cool, then strain (discard the pulp).

Pour 1 tbsp cordial into a flute with ½ tbsp gin or rhubarb gin. Top with chilled sparkling wine; garnish with a pared strip of rhubarb. Leftover cordial will keep for 3 days in the fridge. Makes enough cordial for 8-10.
