This is one of my favorite weeknight dinners because it comes together in just 35 minutes and tastes like you've spent hours in the kitchen. Roasted prawns with pak choi is a simple yet elegant dish that celebrates fresh, quality ingredients without breaking the bank. The prawns are coated in a fragrant mixture of sesame oil, garlic, and ginger, then roasted until pink and tender, while the pak choi becomes wonderfully crispy at the edges. Pak choi is packed with vitamin C and calcium, making this not only delicious but genuinely good for you too. The bright lime juice and sesame seeds add the perfect finishing touches, transforming humble ingredients into something restaurant worthy.

Instructions
- 1
Preheat your oven to 200°C (180°C fan). Pat the prawns dry with paper towels and place them in a large bowl.
Tip: Dry prawns will roast better and brown more evenly.
- 2
In a small bowl, whisk together the sesame oil, olive oil, minced garlic, grated ginger, soy sauce, lime juice, and red chilli flakes to create the marinade.
Tip: Make the marinade while the oven heats to save time.
- 3
Add two-thirds of the marinade to the prawns, toss gently to coat evenly, and set aside for 5 minutes.
Tip: Don't marinate too long as the acid in the lime juice can toughen the delicate prawns.
- 4
Arrange the pak choi cut-side up on a large roasting tray, drizzle with the remaining marinade, and season lightly with salt and pepper.
Tip: Place pak choi on the tray first so it has time to soften.
- 5
Nestle the marinated prawns among the pak choi pieces on the same tray.
Tip: Arrange them in a single layer for even cooking.
- 6
Roast in the preheated oven for 12-15 minutes until the prawns are pink and opaque, and the pak choi is tender with lightly charred edges.
Tip: Don't overcook the prawns or they will become rubbery.
- 7
Remove from the oven and sprinkle the sesame seeds and sliced spring onions over the top immediately while still hot.
Tip: The heat will enhance the fragrance of the sesame seeds.
- 8
Transfer to a serving platter and serve immediately with steamed jasmine rice or noodles if desired.

Coconut & raspberry crush
Have you tried making a drink that's both refreshing and genuinely good for you? This coconut and raspberry crush is my go to when I want something special without the fuss. The best part is how quick it comes together in just ten minutes of prep. Coconut water is absolutely fantastic for hydration, packed with natural electrolytes that your body actually needs. I love combining it with tart raspberries and a hint of mint for that perfect balance of sweet and zingy. It's simple, it's delicious, and honestly, it feels like you're treating yourself to something fancy.

Beergarita
My go to drink for summer gatherings is this refreshing Beergarita, and let me tell you, it's a total crowd pleaser. The combination of tequila, triple sec, fresh lime juice, and a cold Corona creates something that tastes way more complicated than it actually is. Lime juice is packed with vitamin C, which is great for your immune system, and the whole thing takes just five minutes to throw together. Best part? It's incredibly budget friendly since you're probably already stocking most of these ingredients anyway.

Crispy seabass with preserved lemon yogurt
This is one of my favorite quick weeknight dinners because it comes together in just ten minutes flat. Crispy seabass with preserved lemon yogurt is that perfect balance of impressive and effortless, with tangy Greek yogurt and zingy preserved lemon creating a sauce that feels restaurant quality but tastes like home. The seabass gets beautifully golden and flaky while the freekeh provides substantial whole grains packed with fiber and protein. It's the kind of meal that makes you feel like you're treating yourself without any fuss.
