These elegant little bites are some of my favorite go to appetizers when I want to impress without spending hours in the kitchen. The creamy goat cheese pairs beautifully with sweet roasted red peppers and fresh herbs, creating something that tastes like you fussed all day. What I love most is that they come together in just 25 minutes total, and the roasted peppers do most of the heavy lifting for you. Red peppers are packed with vitamin C, which is wonderful for your immune system, and the tangy goat cheese brings a lovely probiotic boost. These are perfect for entertaining because you can assemble them right before guests arrive, and everyone always asks for the recipe.

Instructions
- 1
Preheat your oven to 200 degrees Celsius. Arrange the baguette slices on a baking tray and brush lightly with olive oil on both sides.
Tip: Slightly stale baguettes work wonderfully here as they hold their shape better when toasted.
- 2
Toast the baguette slices in the oven for about 8 to 10 minutes until they are golden and crispy, turning halfway through for even browning.
Tip: Watch carefully during the last few minutes to prevent burning.
- 3
While the bread toasts, mix the softened goat cheese with the minced garlic, half of the basil, all of the thyme, lemon juice, salt and pepper in a small bowl until well combined and spreadable.
Tip: If the goat cheese is still cold, let it sit at room temperature for a few minutes to soften properly.
- 4
Once the toasted baguette slices have cooled slightly, spread about one tablespoon of the herbed goat cheese mixture onto each slice.
Tip: A small offset spatula or the back of a spoon makes spreading easier and more even.
- 5
Arrange a strip or two of roasted red pepper on top of each cheese covered slice, then drizzle lightly with a tiny bit of olive oil.
Tip: You can prepare the canapés to this point a few hours ahead and cover loosely with cling film until serving time.
- 6
Garnish the canapés with the reserved fresh basil just before serving, and add a final grind of black pepper if desired.
Tip: Adding the basil at the end keeps it bright and aromatic rather than wilting from the heat.

The whole thing comes together in under an hour, and honestly, most of the work is just letting your grill do the magic. It feels fancy enough to impress guests but simple enough for a weeknight dinner.
