Instructions
- 1
Preheat your oven to 200°C. Pat the squid rings dry with paper towels and season with salt and pepper.
Tip: Drying the squid ensures better browning and prevents excess moisture during roasting.
- 2
Toss the courgette slices with 2 tablespoons of olive oil, minced garlic, thyme sprigs, and red chilli flakes on a large baking tray. Spread in a single layer and roast for 12 minutes.
Tip: Starting the courgettes first allows them to develop colour before adding the squid.
- 3
Remove the tray from the oven and push the courgettes to the sides, creating space in the centre.
- 4
Toss the squid rings with the remaining 2 tablespoons of olive oil and lemon juice, then arrange them in the centre of the tray.
Tip: The lemon juice adds brightness and helps tenderize the squid.
- 5
Pour the white wine around the squid and courgettes. Return to the oven and roast for 12-13 minutes until the squid is opaque and tender.
Tip: Avoid overcooking the squid as it becomes rubbery; it should only need about 12 minutes total.
- 6
Remove from the oven and sprinkle fresh parsley over the top. Check seasoning and adjust salt and pepper if needed.
- 7
Transfer to a serving platter or individual plates and spoon the pan juices over everything.
Tip: The pan juices contain wonderful flavour from the wine and roasting process.
