- 250crushed biscuits
- 400 mlsalted caramel sauce
- 150 mlheavy cream
- 200 ggranulated sugar
- 100 gunsalted butter
- 4large eggs
- 1 mLvanilla extract
- 50 gflaky sea salt
- 300 gdark chocolate chips
- 200 gfresh berries

Preheat your oven to 180°C. In a medium saucepan, combine the sugar, butter, and 150ml of water. Place over medium heat and cook, stirring occasionally, until the sugar dissolves. Bring to a boil, then reduce the heat to medium-low and simmer for 5 minutes. Remove from heat and stir in the heavy cream. Let cool slightly.

Tip: To ensure the parfait doesn't get soggy, don't overmix the caramel and whipped chocolate layers.
