This is one of my favourite midweek suppers because it comes together in just thirty minutes and tastes absolutely indulgent. I've combined hearty plant based sausages with a creamy colcannon that gets its luxurious flavour from melted Stilton cheese. The mushroom in those sausages is packed with umami and adds wonderful depth without any meat, making this dish feel completely satisfying. Buttery mashed potatoes layered with gently fried cabbage and onions create that classic Irish comfort food vibe, and honestly, the whole thing is so simple to pull together. It's the kind of meal that makes you feel like you've spent hours in the kitchen when really you haven't.

Ingredients
- 300 gramsplantliving mushroom & leek sausages 300g(pack 6 PlantLiving: Mushroom & Leek Sausages)
- 500 gramsmaris piper potatoes(peeled and cut into 1cm discs)
- 1 tspsalt
- 75 gramsunsalted butter(butter)
- 100 gramssavoy cabbage(core discarded, leaves finely shredded)
- 75 mlsdouble cream
- 75 gramsstilton(such as Long Clawson, crumbled)
- 2salad onion(salad onions, finely sliced)

Cook the sausages according to pack instructions, then set aside and keep warm. Meanwhile, tip the potatoes into a large saucepan, cover with cold water and add the salt. Cover with a lid, bring to a simmer and cook for 12-15 minutes, until tender when pierced with the tip of a knife. Drain.

Heat 30g butter in a large frying pan, then fry the cabbage for 3-4 minutes until just tender. Turn off the heat and set aside.

Mash the potatoes until smooth, using a potato ricer, masher or by pushing the potato through a sieve. Add the remaining butter as you mash.

In a small saucepan, heat the cream and Stilton. When just starting to simmer and the cheese has melted, beat into the potato with a wooden spoon. Add the cabbage and ½ the salad onions and mix well. Season to taste. Serve with the sausages and the remaining salad onion sprinkled over the top.
