These savoury pancakes are one of my go to weeknight meals when I want something that feels indulgent but actually nourishes my body. The oats provide brilliant sustained energy thanks to their soluble fibre, so you'll stay satisfied for hours. What I love most is how quick they come together in just half an hour from start to finish, perfect for when you're short on time but refuse to compromise on flavour. The warm spices work beautifully with the sweetness of carrot and corn, while that homemade tomato chilli jam adds a real punch without any fuss.

Instructions
- 1
Place the flour, oats, ginger and turmeric paste and curry powder into a blender and blitz until smooth. Add 400ml cold water and mix again to give a smooth batter, adding a dash more if needed. Mix in the carrot, sweetcorn, bicarbonate of soda and salt.
- 2
Warm ½ tbsp olive oil in a large frying pan over a medium heat. Ladle 4 large spoons of batter into the pan to make 4 pancakes. Cook for 1-2 minutes on one side until the pancake slides on its own, then flip and cook for 1 minute more. Remove to a plate, keep warm and repeat with the remaining batter to make 8 pancakes.
- 3
In a hot dry pan, blister the tomatoes until they start to char and soften, about 5 minutes, then mix in the chilli and tomato jam with 1 tbsp water to loosen. Serve with the pancakes and a green salad, if liked.

Dark chocolate, chilli & salted pretzel slice
This is one of my favourite ways to use up a jar of chocolate sauce and create something that tastes far more impressive than it actually is. The magic happens when dark chocolate meets a hint of smoky chilli and the irresistible crunch of salted pretzels, all wrapped up in a simple sponge. Dark chocolate is packed with antioxidants, so you can feel a little virtuous with each bite. What I love most is that this comes together in just 15 minutes of prep and 40 minutes in the oven, making it perfect for when friends drop by unexpectedly. It's basically a one bowl wonder that never fails to impress.

Coconut & raspberry crush
Have you tried making a drink that's both refreshing and genuinely good for you? This coconut and raspberry crush is my go to when I want something special without the fuss. The best part is how quick it comes together in just ten minutes of prep. Coconut water is absolutely fantastic for hydration, packed with natural electrolytes that your body actually needs. I love combining it with tart raspberries and a hint of mint for that perfect balance of sweet and zingy. It's simple, it's delicious, and honestly, it feels like you're treating yourself to something fancy.

Creamy burrata, sweet broad beans and fresh mint make for a brilliant summertime combo. Serve with crusty bread to mop up the delicious juices.
