This is one of my go to weeknight dinners because it comes together in just thirty minutes and requires minimal fuss. Silken tofu is wonderfully delicate and absorbs flavors beautifully, plus it's packed with protein and iron, making it perfect for keeping you satisfied. The soy miso dressing ties everything together with a gorgeous balance of umami, tang, and subtle heat from the shichimi togarashi. Tender broccoli florets add a fresh crunch alongside the creamy tofu, while jasmine rice makes for a comforting base. It's the kind of meal that feels restaurant quality but honestly couldn't be simpler to prepare at home.

Instructions
- 1
Put all the dressing ingredients into a jar. Screw on the lid and shake well to combine, then set aside.
- 2
Add the garlic and 1 tbsp oil to a frying pan over a medium heat. When the garlic is just golden, add the broccoli and coat in the oil. Add 75ml cold water and stir fry for 5-6 minutes, until the water bubbles off and the broccoli is tender (add more water and cook for longer if the broccoli spears are thick).
- 3
Meanwhile, drain the tofu on kitchen paper, then cut into 1cm slices. Tip the broccoli onto a serving plate and top with the tofu. Spoon over half the dressing, then scatter with the salad onions and sesame seeds.
- 4
Heat the remaining 1 tbsp oil in a small pan over a high heat until smoking, then pour it over to wilt the salad onions a little. Serve with rice or noodles, if liked.

Dark chocolate, chilli & salted pretzel slice
This is one of my favourite ways to use up a jar of chocolate sauce and create something that tastes far more impressive than it actually is. The magic happens when dark chocolate meets a hint of smoky chilli and the irresistible crunch of salted pretzels, all wrapped up in a simple sponge. Dark chocolate is packed with antioxidants, so you can feel a little virtuous with each bite. What I love most is that this comes together in just 15 minutes of prep and 40 minutes in the oven, making it perfect for when friends drop by unexpectedly. It's basically a one bowl wonder that never fails to impress.

Coconut & raspberry crush
Have you tried making a drink that's both refreshing and genuinely good for you? This coconut and raspberry crush is my go to when I want something special without the fuss. The best part is how quick it comes together in just ten minutes of prep. Coconut water is absolutely fantastic for hydration, packed with natural electrolytes that your body actually needs. I love combining it with tart raspberries and a hint of mint for that perfect balance of sweet and zingy. It's simple, it's delicious, and honestly, it feels like you're treating yourself to something fancy.

Minted bean & burrata salad
Creamy burrata, sweet broad beans and fresh mint make for a brilliant summertime combo. Serve with crusty bread to mop up the delicious juices.
