There's nothing quite like coming home to a kitchen filled with the aroma of slow cooked lamb. This is my go to recipe when I want something impressive but honestly, it practically makes itself. The beauty of using a slow cooker is that you get tender, fall apart meat with minimal effort and for a fraction of what you'd pay at a restaurant. Red wine isn't just for drinking, it adds wonderful depth to the broth while also containing antioxidants that are good for your heart. Just brown the lamb, toss everything into the cooker, and let it work its magic for over eight hours while you get on with your day.

Ingredients
- 1 kgaldi british lamb shoulder carvery joint(On-sale 12th March)
- 2 tspvegetable or sunflower oil
- 200 mlred wine
- 12 carrots roughly chopped
- 12 onions quartered
- 2 stickscelery roughly chopped
- 12 bay leaves
- 1a few rosemary sprigs
- 1a few thyme sprigs
- 300 mllamb(chicken or vegetable stock)
- 1potatoes and seasonal greens(to serve (optional)

Dry the Aldi British Lamb Shoulder Carvery Joint with a clean tea towel or kitchen paper, rub all over with the oil, then season well with salt and freshly ground black pepper. Heat a large frying pan over a medium heat and brown the lamb all over – this will take around 10-12 mins. Remove from the pan and set aside. Pour the wine into the pan and cook for 1-2 mins to cook off the alcohol. Turn off the heat.

Tip the veg and herbs into your slow cooker, then lay the lamb on top. Pour in the stock. Cook on high for 6 hrs or low for 8 hrs, turning halfway, if you can.

Remove the lamb and set aside to rest. Set a sieve or colander over a bowl and capture the liquid (either discard the vegetables or eat them with the meal – they’ll be soft but taste great). You can use the cooking liquid to make a gravy simply by thickening with flour or cornflour. Serve with potatoes and seasonal greens, if you like.
