This sticky sweet chilli, pepper and bourbon jam is my go to when I want to impress without spending hours in the kitchen. The beauty of it is that you probably have most of these ingredients already, and it comes together in just over an hour. Fresh ginger is the real star here, giving the jam a lovely warmth while also helping with digestion and inflammation. The combination of roasted peppers, bourbon, and a good hit of chilli creates something utterly addictive that works beautifully with cheese, meats, or even stirred into yogurt for breakfast. Trust me, once you make this, you'll be giving jars away to everyone.

Instructions
- 1
Sterilise 2 x 450g jars (or a few smaller ones), by washing in hot soapy water and drying in a low oven. Deseed ½ the chillies and leave the rest with their seeds (or deseed them all if you don’t want too much chilli heat). Put them in the large bowl of a food processor with the onion, peppers, ginger and garlic; whizz until finely chopped (or finely chop by hand).

Tip the chopped chilli mixture into a large pan with the rest of the ingredients, apart from the bourbon whiskey, and cook over a low heat, stirring until the sugar has dissolved. Increase the heat and bring to the boil, then bubble the jam for 1 hour-1 hour 10 minutes, stirring regularly (take care as it may spit), until the mixture is thick and sticky enough to hold its shape. Turn off the heat and add the whiskey, stir to combine, then carefully spoon into the sterilised jars and leave to cool before labelling. This will last for up to 6 months in a cool place. Once opened, store the jam in the fridge for up to 2 weeks.

Dark chocolate, chilli & salted pretzel slice
This is one of my favourite ways to use up a jar of chocolate sauce and create something that tastes far more impressive than it actually is. The magic happens when dark chocolate meets a hint of smoky chilli and the irresistible crunch of salted pretzels, all wrapped up in a simple sponge. Dark chocolate is packed with antioxidants, so you can feel a little virtuous with each bite. What I love most is that this comes together in just 15 minutes of prep and 40 minutes in the oven, making it perfect for when friends drop by unexpectedly. It's basically a one bowl wonder that never fails to impress.
