My family loves tacos, so I created this taco meatloaf to satisfy those cravings in one delicious dish. It's super simple to throw together in just 15 minutes, then the oven does most of the work while you relax. The bell peppers add vitamin C and fiber, which is great for your health, and everything comes together for a hearty weeknight dinner that won't break the bank. Plus, leftovers make amazing sandwiches the next day!
