This is one of my favorite quick weeknight dinners that feels surprisingly elegant for barely twenty minutes of work. The smoky mackerel pairs beautifully with nutty tahini and just a whisper of heat from chilli oil, while the soba noodles and fresh vegetables keep everything light and balanced. Mackerel is packed with omega 3 fatty acids that are wonderful for your heart and brain, making this not just delicious but genuinely good for you. Best of all, it's the kind of meal that comes together faster than you'd think, and it won't break the bank. Perfect when you want something that tastes like you've fussed but honestly haven't.

Instructions
- 1
Bring a large pan of salted water to the boil and cook the noodles according to pack instructions, stirring frequently to stop them clumping. Add the beans for the final 2 minutes of cooking. Drain in a colander and run under cold water.

Meanwhile, skin and flake the smoked mackerel. In a large bowl, mix the tahini and chilli oil with 1-11⁄2 tbsp cold water until it becomes the consistency of single cream; season. Add the drained noodles and runner beans to the bowl along with the carrot, most of the salad onion and the flaked mackerel. Toss together until evenly coated and glossy, adding more cold water and seasoning if needed. Spoon into a serving bowl and sprinkle over the remaining salad onion and the sesame seeds.

Campfire stew
Nothing beats a hearty campfire stew when you're feeding a crowd, and this one's become my go to recipe because it's so straightforward to throw together. The beauty of this dish is that most of the work happens while you're relaxing by the fire, letting everything simmer away for hours. Gammon gives it a wonderfully smoky flavor, while the haricot beans pack in fiber and protein to keep everyone satisfied. It's the kind of rustic, warming meal that tastes even better outdoors, and honestly, it costs very little to make while feeding plenty of people.

Ultimate roast potatoes
After years of experimenting, I've finally cracked the code for roast potatoes that are impossibly crispy on the outside and fluffy within. The secret is using duck fat, which contains oleic acid, a heart healthy monounsaturated fat that's actually good for you. What I love most is how simple this really is: just potatoes, fat, flour, and salt. From prep to plate in just over an hour, you'll have restaurant quality results without any fuss. Trust me, once you try these, you'll never go back.

Yuzu Collins
Have you tried a Yuzu Collins? This is my go to drink when I want something refreshing that comes together in just five minutes. The yuzu juice adds this beautiful citrus brightness that feels fancy but honestly couldn't be easier to make. I love that yuzu is packed with vitamin C, so you're basically getting a little immune boost while you enjoy your cocktail. It's the kind of drink that impresses friends without requiring any special bartending skills, perfect for a casual evening at home.
