There's nothing quite like a creamy, luxurious mushroom risotto when you want to impress without spending hours in the kitchen. This recipe comes together in just over an hour, making it perfect for a weeknight dinner or dinner party. I've loaded it with three different types of mushrooms for incredible depth of flavor, plus porcini paste and truffle oil that make it taste restaurant quality. The best part? Mushrooms are packed with immune boosting compounds and B vitamins, so you're getting something truly nourishing alongside all that comfort. Trust me, this is the risotto recipe you'll return to again and again.

Instructions
- 1
Roughly chop the porcini mushrooms, place into a small mug and cover with 75ml boiling water. Set aside.
- 2
Roughly chop the chestnut mushrooms. Heat 1 tbsp truffle oil in a large frying pan over a medium-high heat, then sauté until golden. Leave them undisturbed for a few minutes before stirring so they can develop some colour. Turn off the heat and set aside.
- 3
In a large saucepan, melt half the butter with 1 tbsp truffle oil, then gently fry the onion and celery for 10-12 minutes until soft and translucent.
- 4
Stir in the rice and cook for 1-2 minutes more until the grains are slightly translucent around the edges. Pour in the wine and allow to bubble away.
- 5
Dissolve the stock cubes in a large jug with 1L freshly boiled water, then add the porcini mushrooms with their juices. Add the stock to the rice, one ladleful at a time, stirring often and allowing it to absorb before the next addition. Cook for 25-30 minutes until the rice is just al dente and creamy.
- 6
Stir through the sautéed chestnut mushrooms and porcini paste. Remove from the heat, add the remaining butter and the parmesan, then beat vigorously to emulsify. Cover and allow to sit for 3-5 minutes.
- 7
Meanwhile, heat the remaining oil in the frying pan, add the woodland mushrooms (whole or torn if large) and sauté until golden. When the mushrooms are almost ready, add the garlic, mix well to coat, cook for a final minute, then scatter over the parsley, add some seasoning and a sprinkle of cheese, then serve.

This is one of my favourite ways to use up a jar of chocolate sauce and create something that tastes far more impressive than it actually is. The magic happens when dark chocolate meets a hint of smoky chilli and the irresistible crunch of salted pretzels, all wrapped up in a simple sponge. Dark chocolate is packed with antioxidants, so you can feel a little virtuous with each bite. What I love most is that this comes together in just 15 minutes of prep and 40 minutes in the oven, making it perfect for when friends drop by unexpectedly. It's basically a one bowl wonder that never fails to impress.

It's simple, it's delicious, and honestly, it feels like you're treating yourself to something fancy.

Creamy burrata, sweet broad beans and fresh mint make for a brilliant summertime combo. Serve with crusty bread to mop up the delicious juices.
