In a large skillet, melt 2 tablespoons of the butter over medium heat. Use a 1/4-cup measuring cup to scoop the matzo mixture into the pan, cooking 3 to 4 pancakes at a time. Be careful not to crowd the pan. Cook until golden and crispy on the first side, 2 to 3 minutes. Flip to cook the other side until the eggs are cooked all the way through, 2 to 3 minutes more. Repeat cooking in batches with the remaining butter and matzo mixture, making about 8 pancakes total.
