You know how some nights you're staring at the fridge wondering what to make for dinner? This salsa chicken is my go to solution. It's honestly the easiest thing ever because you only need three main ingredients, and it comes together in just 30 minutes. I love using salsa verde because it's packed with cilantro and lime, which are full of antioxidants that are so good for you. Plus, pepper Jack cheese melts beautifully over the chicken and adds this amazing creamy richness. The whole thing is so simple that even on my busiest weeknights, I know I can get a delicious, home cooked meal on the table without any stress.

Instructions
- 1
Arrange a rack in the center of the oven.
- 2
Season the chicken evenly with pepper. Place the chicken in a 12-inch ovenproof skillet or 3-quart baking dish. Drizzle with the oil. Pour the salsa verde over the chicken.
- 3
Bake until the salsa is bubbly and a thermometer inserted into the thickest part of the chicken registers 140°F, 20 to 25 minutes. (Note: the chicken is not supposed to be fully cooked at this point).
- 4
Remove from the oven and turn the oven to broil. Sprinkle the chicken with the cheese and return to the oven. Broil until a thermometer inserted into the thickest part of the chicken registers 165°F and the cheese is melted and browned in spots, about 4 minutes.
- 5
Season the chicken with salt to taste (I like to season at the end since the saltiness of different brands of salsa varies widely). Garnish with cilantro, if using. Refrigerate any leftovers in an airtight container for up to 5 days. Love the recipe? Leave us stars and a comment below!
